Products Description
Sodium DL-Malate is a good food quality preservation agent, widely used in aquatic products, meat food. It has good dispersibility and water retention in food, and can reduce water activity in food, good anti-dehydration effect, and mixed with sodium caseinate can prevent oil detachment, thereby reducing the weightlessness and metamorphism of aquatic products, meat and other foods. In addition, DL-malate sodium can increase the freshness of food, and give it a good taste, this aspect is widely used in Japan, the domestic application is also growing rapidly.The saltiness of DL-malate is about one third of that of salt, so it can be used as a substitute for salt to make salt-free soy sauce. Adding 3% of DL-malate in ham and sausage can reduce the amount of salt by 1%. Can improve the growth of yeast, the use of 0.3% of the total medium. As a buffer, DL-malic acid and DL-malic acid can be used in cool drinks and acidic food to buffer the sour taste.
